Production Method:
First, combine all sauce ingredients in a small bowl and set aside. Cut the chicken breasts into thin strips of the same size. Marinate with soy sauce, sesame oil, garlic paste, sugar and white pepper for at least 10 to 15 minutes.
Next, add one egg white to the chicken and mix well. Then add the cornstarch and coat each chicken piece until it separates. Add more cornstarch if needed.
Heat the oil to a high heat, about 350 F, and fry the coated chicken strips for 1-2 minutes, until lightly browned. Then remove from oil and let rest on a cooling rack for 4-5 minutes.
Then stir fry until golden and crispy.
Heat a large wok/pan to medium-low heat, drizzle with oil, and sauté the chopped garlic for a few seconds.
Pour in the chili paste mixture and stir for a few seconds to heat the sauce.
Add the fried chicken strips to the pan and toss to combine all the ingredients with the sauce.
Turn off heat and sprinkle with chili flakes and chopped scallions.
